JACKSON, Tenn. — Local Mexican restaurants are getting ready for their biggest day of sales of the year. Restaurants are expecting huge crowds for the holiday of Cinco de Mayo. Most know it for margaritas and chips and salsa, but the holiday originally started to celebrate Mexico’s victory over France in 1862. Restaurant owners say business increases by more than 50% on this day as people come in to celebrate.
