Thankful Thursday- Dessert
Andrea Winchester of Jackson is the winner of our Thankful Thursday segment for the dessert category. Here is the recipe for her Pumpkin Roll. Cake: 2/3 cup of pumpkin 3 eggs 1 cup of sugar 1 tsp. of lemon juice 3/4 cup of plain flour 1 tsp. of baking powder 1/2 tsp. of salt 1 tbs. of cinnamon 1 tsp. of ginger 1 cup of chopped nuts Beat eggs, add sugar, stir in pumpkin and lemon juice. Combine dry ingredients and add to mixture. Pour batter into greased and floured jelly roll pan and sprinkle with nuts. Bake at 375 degrees for 15 minutes. Sprinkle a dish towel with powdered sugar. Turn cake onto towel. Roll up and allow to cool. Unroll cake, sprinkle with nuts, and spread filling. Roll up cake and refrigerate. Slice when thoroughly chilled. Filling: 1 cup of powdered sugar 6 oz. of cream cheese 1/4 cup of butter 1/2 tbs. vanilla Beat with mixer until smooth.
