JACKSON, Tenn. — Smoked ribs for a new roof — that’s what one local church has been cooking up this holiday weekend. Volunteers from Highland Park Church have been cooking non-stop for their annual fundraiser. The barbecue lasted all weekend and ended Monday afternoon when the church sold out of food. Each year the fundraiser is dedicated to helping someone in their neighborhood, and this year is no different. “Every sale we do is geared toward meeting needs in the community,” said Phillip Robinson, a student minister at the church. “This sale is in particular earmarked for this gentleman that’s next to our church.” They raised $4,500 over the weekend to fix the neighbor’s roof and other repairs needed around his house.
