Grand opening held for new vegan restaurant called Littlebird

JACKSON, Tenn. – Littlebird Restaurant & Bar, a new vegan restaurant, had their grand opening Wednesday near downtown Jackson.

Littlebird’s menu offers their guests a variety of vegan and gluten-free options as well as signature cocktails and mocktails. 

“I felt like Jackson deserved that variety. Vegans and plant-based consumers alike, folks avoiding alcohol, people who are gluten free, they really don’t have those places to go where they feel accounted for on the menus,” said Lauren Kail, the owner of Littlebird.

Kail came up with the idea a few years back by combining her business background with her love of the restaurant industry.

“There are so many offerings for people who are gluten-free people who are looking for plant based cuisines. We have a signature cocktail list that we have created here. It’s not your standard classic cocktails. It’s our spin on cocktails and mocktails alike,” Kail said.

A taste of a couple signature entrees are the mushroom steak alfredo and the chicken sandwich. 

“It is battered and fried oyster mushrooms. And not all mushrooms are alike. So when you think of a mushroom, you kind of have a texture in your mind. But oyster mushrooms shred like chicken. So it’s really just swapping one ingredient for another and it makes for a really delicious dish,” Kail said.

Kail says the goal is not to convert people to veganism, but rather to expose others to healthy and delicious food. 

“I think that the goal is to make vegan food approachable with no pressure and no obligation,” Kail said.

According to the state of the marketplace food service report, the number of restaurants in the US offering plant-based options increased by 62 percent in the last decade.

Currently, nearly 50 percent of restaurants across the country offer plant-based options.
