Recipes for turning Thanksgiving leftovers into a whole new feast
JACKSON, Tenn. — Don’t throw out the leftovers — here is an idea on how to whip up some quick appetizers with those leftovers from your holiday feast.

Experts say Americans waste about 200 million pounds of turkey. That’s in addition to 40 million pounds of mashed potatoes, and 30 million pounds of stuffing. All of this adds up to about $293 million in food waste.
With a few common household pantry items like eggs, breadcrumbs, and a few spices, leftovers like sweet potatoes and cranberry sauce can be turned into a gourmet appetizer or even just a snack for the family.

“This recipe is a Holiday Spice Salmon Popper, we are using a little bit of pumpkin pie spice, as well as some ginger salt and pepper,” said Kelsey Murphy with Safe Catch. “You can place them in a sauté pan, so I heated up some oil on the stove earlier today and sautéed mine.”
