Restaurant on wheels rolls into Jackson

SOUTH JACKSON, Tenn. — The food truck craze is rolling into Jackson, and a new barbecue restaurant on wheels is making a big impression. The finishing touches are being made to the truck, as they prepare for their grand opening Thursday. Owner Jeff Hammonds said this is like a dream come true. “I’m just excited for life right now and catching that second wind,” said Hammonds. “I love to see people smile and good food.” Hammonds also said he opened this business to give back to a good cause. “I’ve always wanted to give back one way or the other,” said Hammonds. “So I figured we’re just going to give a portion of all sales as long as we’re in business to Relay For Life.” Now this is no ordinary food truck. The massive trailer can cook up to 450 pounds of meat and feed 2,000 people every day. Richard Barrett and his company Custom Mobile Designs built the rig and says it can be self sufficient for up to three days. “It carries enough water, propane, and diesel so we can fire it up and run for 72 to 78 hours non-stop,” Barrett said. He also says the most unique thing about these rigs is they are completely customizable. “We actually design and build them for the client,” said Barrett. “A food truck is only so big and you can only do so much with them. This here is unlimited. Whatever a client wants to do we can build the features into it.” Overall, Jeff Hammonds is jut excited to see some happy customers. “We’re hear mainly to see smiles on peoples faces and get that good old barbecue in them,” Hammonds said. Hambone’s Barbeque will hold their grand opening Thursday at 11 a.m., complete with games and giveaways. They’re set up on South Highland in Jackson, just before you get to Bemis.
